Latency is the time from the detector giving a target response to you hearing it in the cups. As that gap widens, the sound is no longer aligned with where the coil actually is, so you sweep over a target and hear it a moment after you have gone over it. That's why manufacturers built their own wireless systems instead of using stock Bluetooth. Bluetooth was designed for music and calls where a fraction of a second delay is not critical.
