Your detector has a coil that sends a signal into the ground and reads what comes back. Metal targets bounce that signal another way. Magnetic minerals in the soil, such as iron oxide, will reflect it a different way, but often close enough to fool a detector that is not tuned for it.
Ground balance is used to tune the machine to the mineral signature of the ground and tune it out. Think red clay soil, found in many old homesteads and agricultural land. It is heavily mineralized and if not balanced correctly it will set off a detector constantly. Get the balance right and that clay is quiet and a real target signal can come through clean.

In manual balancing you pump the coil up and down over a clean surface, adjusting a dial or digital setting until the audio response flattens out. It takes a little practice but gives you better control in the ground that shifts a lot in one hunting site, think a field with patches of clay next to sandy soil.
Automatic ground balance continually reads the soil while you hunt and automatically adjusts on the fly. No need to stop and re-calibrate every time the ground changes. This is common on most beginner and mid-range detectors and it is actually good enough for most hunting conditions.

Mineralized land is most often found on beaches and in ancient iron-rich soil. Salt water beaches are a special case. The salt is conductive in itself, except when it's contaminated by minerals. If you are detecting near water regularly, it is worth looking at a machine designed for that environment rather than fighting your settings every trip.
Iron-rich inland soil behaves differently but causes the same headache: constant false positives unless you have balanced correctly for that specific ground. Detectors built for high mineralization ground handle this kind of terrain with far less fuss.
